The 2015 Cabernet Sauvignon exudes elegance and typicite’. A mélange of graphite, smoke, leather, lavender, licorice and black cherry build as the wine gains volume in the glass. Ample fruit, equally imposing tannins and a vibrant finish are some of the signatures.

2016 Yountville Cabernet Sauvignon
The 2016 Cabernet Sauvignon is a classic Napa Valley wine. Gracious and medium in body, with remarkable finesse, the 2016 is captivating from the very first taste. Sweet tobacco, menthol, licorice, lavender, rose petal and spice add striking layers of dimension to this translucent, super-expressive Cabernet. Made with a dollop of Merlot that rounds out the tannins. This wine will improve with age for the next 12 years.

2017 Yountville Cabernet Sauvignon
The 2017 Cabernet Sauvignon is fabulous. Rich and beautifully layered in the glass, the 2017 has gorgeous depth and a touch of exoticism that is so appealing. Ripe red berry fruit, floral overtones and a touch of spice are all laced together. This was bottled in July 2019 and already super impressive, even in the early going. This is an especially racy style than 2016 but should age longer because of high amounts of fine grained tannins.
The Barrels
Deliberately elevating the natural fruit characteristics that the vineyard produces, the Boutes Grande Reserve barrel compliments the flavors and aromatics with every sip. Before 2-3 years of seasoning and construction, the Boutes Grande Reserve’s French Oak wood is sourced from standing trees in a sustainable forest. The hallmark process of lower temperatures and less direct heat create a lighter, blonde accent as to the toast and aromatics yet lend mouthfeel, structure and balance to the wines
Tonnellerie Boutes was established in 1880, with the 5th and 6th generations currently in ownership/management roles within the company. Boutes is the 8th largest barrel producer in France. With a workforce of 120+, produce 30000 barrels a year, and sell in every major wine region around the world, they are one of the few cooperages that buy standing trees from the ONF (Dept of Forestry), and have their own Stavemill and Seasoning Yards, all in the Allier (a Department near the center of France). Once the staves are seasoned, they are shipped to the cooperage in Bordeaux for construction.
